Its Almost Here – Salad Dressing Workshop

On August 9th at 6:00pm at Get Fit NH Epsom, come learn how to make your own healthy, delicious dressings. During the workshop I’ll show you how easy it is to make your own salad dressings, with healthy oils and without a bunch of sugar and artificial ingredients.

You’ll walk out of the workshop with a jar full of a dressing you made to start using right away. You’ll also receive a mini-cookbook over 20 salad dressing recipes. I love oil and vinegar as much as the next girl, but I like a bit of variety too!

Check out just this delicious recipe:

Tangerine Lime Salad Dressing:

  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • Juice of half a tangerine
  • Juice of half a lime

Mix the ingredients for the dressing. Whisk well, so the oil and juice mix properly and the dressing gets a little bit thicker.

Served best with this salad.

In a large bowl combine 4 big handfuls of mixed salad greens, a handful of olives, 5 Sun-dried tomatoes, and a couple tablespoons of chopped almonds and walnuts. Add the Tangerine-Lime Dressing and mix until all the ingredients are coated.

Oh. So. Good.​  🙂

But wait, there's more! 

Many salad dressings use mayonnaise as their base, right? But do you know how easy it is to make your own? I'll show you there.

 We are hosting our next Jumpstart Nutrition Coaching Seminar on the Interweb! 🙂

DIY Salad Dressing Workshop Returns

Salads are great, but without a good dressing, you’ve just got a pile of raw veggies, right? Healthy, but not always exciting. But store bought dressings usually have a bunch of sugar, use low grade oils, and have ingredients most of us can't pronounce.

Because of all that, I’ve made a habit out of making my own tasty and healthy dressings. With a bit of tweaking I have figured out how to turn classic dressings like Ranch and Caesar into ones that my whole family can enjoy!

Brookford Farms CSA Pickup at Get Fit NH – Winner!

There is nothing fresher, tastier, and yes even more friendly to the environment than having local produce grown by local farmers. For those of us who don't have the time or talent to grow our own veggies, getting involved in a CSA is like gold! (CSA= Community Supported Agriculture)

This is where it gets exciting, Get Fit NH is sponsoring a pickup place for Brookford Farm's CSA. You will be able to pickup your veggies at Get Fit NH in Concord. Last summer we did this and it was fantastic. For those of you out in Epsom, Coach Nancy will bring your food to the Epsom gym for pickup there as well. I would say that's perfect for everyone!

Brookford Farms has an easy registration process. They have different packages to fit your family's needs. While registering simply check the box for Get Fit NH Concord as your pick up place. Your veggies start arriving on June 5th, 2017 to October 22rd, 2017.

A Short, Sweet and Specific Spotlight

I met Robie just over a year ago. She has made me smile every day since. I think it is her goal to make others happy. She has a wit that makes you think and always leaves you chuckling. While she might not be the loudest at the 6pm training time, she knows how to bring it. She was kind enough to let me interview her. 

Coach Nancy: Why did you choose to come Get Fit NH?
Robie: Honestly, it was local and I thought "what do I have to lose, so why not?". I can do anything for 2 weeks, right?

Coach Nancy: What did you learned after you first 2 weeks?
Robie: That this is possible. The first two weeks are your chance to learn about how Get Fit works, but they are two weeks of active participation. You will get the encouragement and education you need to succeed, even if it is at your pace or you are complaining in a witty way that I am sure does not sound like complaining at all.
Coach Nancy: How do you feel after almost 12 months into your training?
Robie: I have had some set backs, but I feel better as a human being. I am one of those who has to do things when I want to commit to them. I am committed to working out, so I work out. GET FIT is where I want to workout and where I want to learn to be a better me. I am working on wanting to take complete advantage of all the nutritional knowledge that Get Fit has to offer. I do listen and try, but as it is said "its me, not you".
Coach Nancy: Describe your overall experience at Get Fit NH.
Robie: Dean and Nancy have created the most positive, inclusive and goal driven "gym" I have ever been a part of. The push to be better, do better with constructive encouragement and a little bit of competition, to me, make this the perfect gym.

​Robie has survived much more than her first month at Get Fit NH. She is just earned Hall of Fame Status in March. Congratulations and thank you, Robie.

Jumpstart Nutrition Coaching – Getting Yourself Going on Your Goals

I love cookbooks. I love to make people happy with cooking. I love to eat food. Food makes me happy. 

I also get agitated because cooking takes a long time. I forget to plan and prepare so I end up stressed and rushed. ​I often serve the same thing over and over. Am I truly making anyone happy for a lifetime with my food skills? Do I know what foods should be on my plate? How much do I need to eat? Can my kids eat the same thing I do? What foods will make me healthiest? What foods can harm my body?

The World is Brighter Because of Jennifer

Today I got an email from Rock Star Jennifer. She had just tried a new recipe. She made Jashbrowns (no, I didn’t spell that wrong). Jennifer had used a vegetable called Jicama. She used shredded Jicama to make a variation of hash browns for her breakfast. Now you can see why they are called Jashbrowns. Served with 2 eggs, they had made a wonderful meal she just had to share with someone. I was one of those lucky people.

In fact, this is not unusual for Jennifer. We talk food a lot. Jennifer is has been training with us for almost 5 years. She’s made a lot of changes physically but her kitchen skills have changed too. While she has always been an amazing cook - her kids rave about her meals - the type of foods she fixes have changed. I’m proud of Jennifer. She is helping to change the world. She keeps working at eating healthy for her and her husband. She shares her new found kitchen gadgets with those next to her in training, and she sends recipes out over emails and Facebook.

Jennifer has taken hold of new eating habits and translated her knowledge into a healthier world for her and her husband. But since she doesn’t keep that to herself, she shares it with her children who live across the US, she is changing the world one family at a time.

Here is the recipe for Jashbrowns from Jennifer:

"Very easy - I modified it from a cookbook called “Necessary Food”. Since the amount of jicama differs depending on the size, it’s hard to make an exact recipe. I don’t think there is a right or wrong way to doing it.

Jash-browns​ with Eggs

  • Butter or ghee
  • Peeled and grated jicama
  • Salt & pepper
  • 2 eggs

Heat a dollop of butter or ghee in a skillet on medium high heat until it starts to brown. Add as much grated jicama as you want, spreading it out into a thin layer. Let the jicama fry uncovered so the moisture can escape. Fry for several minutes, flipping once in a while. As the jicama loses its moisture, it will start to get brown. When your jashbrowns have enough of a sear for your liking, season them liberally with salt and pepper and set them aside to keep warm.

Fry two eggs in some butter in your skillet, season them with salt & pepper, and serve them over the jashbrowns.

Like I said, very easy! I was surprised at how easily jicama shredded and how much there is in one small one! I shredded the whole jicama. Since I didn’t want to eat it all today I froze the rest. I also added garlic salt to the jicama along with the salt and pepper before freezing. Jashbrowns are very interesting, with a crunchy texture and just a little hint of sweetness. I can’t wait to serve this again."

I’d like to help Jennifer change the world to a healthier place. We all know healthier people are happier people and the world needs more happy.

Spotlight is Bright on Adam

Adam and his wife Deb have been a part of the Get Fit NH family for a long time. Each time I see Adam, I get a big hug and a smile that usually means trouble. But Adam surprised me with an email soon after the 21Day +Nutrition Challenge was over. I think it surprised Adam too. 

"I (Adam) was stuck in a food rut.  I had joined Get Fit NH 7 years ago. At that point I was eating lousy, just ask my wife, Deb. Since joining I was eating much healthier but I cheated with carbs and sugar on the weekends and after training. I finally took the plunge and did the 21 Day + Nutrition Challenge. This program helped me get back on track and shed 18 pounds. I got rid of the bloated stomach feeling and improved my athletic performance.

Last weekend at the Crash B's in Boston, MA I was able to bring my 2000 Meter Rowing Erg time down by 20 seconds. That time blew past my pre-challenge time four (4) weeks earlier. I was always skeptical that your programs which cut back on carbs would leave me energy depleted for competitions but this is FALSE. I stepped off the rowing erg this past weekend in Boston feeling great and I recovered very quickly afterwards. I recovered much more quickly than ever in the past without joint pain or muscle discomfort. I am now energized and empowered to keep moving forward...I can't wait to see if I can lower my Half Marathon time and Ski Erg 1000 Meter time this fall. I know have to remember to drink enough water too. I didn't go into the 21 Day+ Challenge looking to lose time off my performance. What a great side benefit. Thanks."

I can't wait to see what another 18 pounds down does to his time on the rower. Watch out Boston. ​
